Beef and Gravy Mash Bowl
Hearty beef and gravy over mashed potatoes makes a classic, satisfying dinner.

Season the beef with salt and pepper. Heat olive oil in a large pot over medium-high heat and brown the beef in two batches, 3 to 4 minutes per side.
Add the onions, carrots, and garlic; cook 4 minutes until the onions start to soften. Stir in the tomato paste and flour and cook 1 minute.
Pour in the beef broth and Worcestershire sauce, then add thyme. Bring to a simmer, cover, and cook 20 to 25 minutes until the beef is tender and the sauce thickens.
While the beef simmers, boil the potatoes in salted water for 12 to 15 minutes until fork-tender. Drain, then mash with milk and butter.
Taste the beef gravy and adjust salt and pepper. Serve the beef and vegetables over the mashed potatoes.
