Cheddar Egg and Caramelized Onion Burger Sandwich
A hearty, cheesy burger-style sandwich that makes eggs the star, just as you asked.
Ingredients
Steps
Slice the onion thinly. Stir the mayonnaise and Dijon mustard together in a small bowl.
Heat the olive oil in a skillet over medium heat. Add the onion and a pinch of salt; cook, stirring occasionally, until soft and golden, about 8–10 minutes. Transfer to a plate.
Toast the cut sides of the buns in the same skillet until lightly browned. Spread the mustard mayonnaise over the bun halves.
Lower the heat to medium-low. Crack the eggs into the skillet, season with black pepper, and cook until the whites are set and yolks are at your preferred doneness, about 3–5 minutes. Add a cheddar slice to each pair of eggs during the last minute to melt.
Divide the spinach and caramelized onions between the bun bottoms. Top each with two cheesy eggs, close with the bun tops, and serve hot.
