A bubbling, cheesy bake brings the warm, familiar comfort you asked for, with mushrooms and spinach tucked into every bite.
Ingredients
Steps
Heat the oven to 375°F. Cook the lasagna noodles in salted boiling water until just tender, then drain and lay them flat.
Warm the olive oil in a skillet over medium heat. Cook the onion and mushrooms for 6–7 minutes, stirring, until softened and browned; add the garlic and oregano for 30 seconds, then stir in the spinach until wilted.
Mix the ricotta with the salt and black pepper. Spread a thin layer of marinara in a small baking dish, then layer in noodles, ricotta, mushroom-spinach filling, mozzarella, and Parmesan. Repeat, finishing with sauce and cheese.
Cover the dish with foil and bake for 20 minutes. Uncover and bake 8–10 minutes more, until bubbling and golden at the edges. Rest for 5 minutes before serving.
