Slice the zucchini, onion, and bell peppers into grill-sized pieces. Toss with the remaining 1 tablespoon olive oil and a pinch of salt.
Grill the vegetables over medium-high heat, turning once or twice, until charred at the edges and tender-crisp.
Grill the lamb over medium-high heat until browned outside and cooked to your preferred doneness, about 3 to 5 minutes per side for medium-rare depending on thickness.
Rest the lamb for 5 minutes, slice it, then serve with the grilled vegetables and parsley over the top.
