Italian Tomato-and-Egg Skillet with Parmesan
A cozy Italian supper with soft eggs, savory tomato sauce, and plenty of crusty bread for dipping.
Ingredients
Steps
Warm the olive oil in a large skillet over medium heat. Add the onion and cook, stirring, until softened, about 4 minutes; stir in the garlic for 30 seconds.
Add the crushed tomatoes, oregano, red pepper flakes if using, salt, and black pepper. Simmer uncovered, stirring occasionally, until slightly thickened, about 8 minutes.
Stir in the spinach and cook until just wilted. Make four small wells in the sauce and crack an egg into each well.
Cover the skillet and cook over medium-low heat until the egg whites are set and the yolks are still soft, 6 to 8 minutes. Sprinkle with Parmesan and basil.
Toast the bread and serve alongside the skillet for dipping into the tomato sauce and runny yolks.
